The pressure cooker that we know today was invented by a French Physicist Named Denis Papin in 1679. Since then newer versions of the product have come to the market after every few years. Pressure cookers are known by different names depending upon the nature of work that they are used in along with their size. Large pressure cookers are called pressure caners in the United States due to their capacity, while the version used in laboratories and hospitals for sterilization purposes is called autoclave.

Pressure cookers are usually made from aluminum or stainless steel. Even though aluminum is unsuitable for dish-washing, aluminum pressure cookers are still very popular. On the other hand, commercial stainless steel rice cooker is very heavy since they are made with heavy three-ply stainless steel or copper clad bottom for uniform heating.

Unlike in previous years, cooking in pressure cookers is generally safe now since the modern pressure cookers come with two or three additional safety valves apart from the safety valve that is placed on the nozzle next to the handle.
